This is a really basic, very flexible recipe for delicious homemade granola. Your kitchen will smell AMAZING while it’s baking! Great for topping your morning yogurt or giving as a gift.
Golden Granola
1/4 cup butter, melted or 1/4 c. coconut oil, melted
1/4 cup honey
1 1/2 tsp. ground cinnamon
1/2 tsp. salt (if you use salted butter, you might want to decrease to 1/4 tsp.)
3 c. old-fashioned oats
1 c. coconut flakes
1 c. chopped walnuts, sliced almonds, pecans – whatever you like!
2/3 cup dried fruit – raisins, dried cranberries, blueberries, cherries, etc.
In a bowl, stir butter, honey, cinnamon and salt until well blended. Combine the oats, coconut and nuts, then add butter mixture and stir to coat evenly. Spread on a greased jelly roll pan (you can also use a 9×13 pan – you’ll just need to bake a bit longer). Bake at 275 degrees F for 50-60 minutes or until golden brown, stirring every 15 minutes. Add dried fruits and gently mix to combine. Cool completely, stirring occasionally. Store in an airtight container.
